Fiaschi 2025 Sangiovese

The Fiaschi Sangiovese is made from fruit grown at Settlers Ridge Organic Vineyard, one of Margaret River's earliest certified organic vineyards. The vines, now more than 30 years old, are planted on the gravelly soils of Wilyabrup, producing fruit with natural concentration, structure, and bright acidity. Organically farmed with a focus on soil health and vineyard balance, the site consistently delivers fruit with clarity and regional character.

The wine takes its name from the traditional fiasco, the straw-wrapped bottle historically associated with Chianti. While inspired by this Italian heritage, the wine is made in a contemporary style that reflects both the vineyard and the vintage. Around 25% whole-bunch fermentation contributes floral aromatics, subtle spice, and additional structure without dominating the fruit.

Fermentation begins with indigenous yeasts and is managed with gentle twice-daily punch-downs. The wine remains on skins for approximately one month to develop flavour, texture, and tannin before the free-run wine is separated from the pressed fraction. Only the free-run portion is used for Fiaschi, resulting in a finer tannin profile and greater purity of fruit. The wine is matured for 10 months in seasoned oak, allowing the vineyard character and fresh fruit profile to remain the focus.
